Grandma's Albondigas Soup
Delicious, Nutritious, and Hearty Albondigas Soup! Perfect for any occasion, surprisingly simple, & makes excellent leftover through meal prepping. This dish is far from a one-note dish, as it is a rich a flavorful tradition.
Ingredients
- Meatballs:
- Hamburger Meat 2lbs
- Rice 1/3 cup
- Salt 2 tsps
- Garlic Powder 1 tsp
- Onion Powder 1 tsp
- Cumin 1 tsp
- Oregano 1 tsp
- Basil 1 tsp
- 1/4 Cup Fresh Cilantro chopped or 1 tsp dried seasoning (optional)
- Yellow Onion 1/4 Large Onion Or 1/2 Medium sized
- 1 Egg
- 1/2 Pack of crackers or 1 personal size pack
- 3 Cloves of garlic or to your liking
- Make Meatballs 1-1.5" in size
- Veggies of your choice; We Use:
- 4-5 Large Carrots or several mini carrots
- Whole Stock of Celery
- 4-5 Small Potatoes
- 1 Small Zucchini
- 1 Small Squash
- Broth:
- Stock Seasoning 6 tbs or Broth (homemade or from store)
- 4tsps of Salt or to taste
- Water 3-4 inches from top of pot I use 2- 6.5 qt Pots ( 12 Qt would work great)
- 6 Cloves of Garlic (Or to taste)
- 2 cans diced tomatoes 14.5 oz
- 1 Cup of noodles of your choice (Our favorite is small Shells)
Instructions
- Sauté Onions, Carrots and Celery for 3-4 minutes
- Add 3 Cloves of Garlic & saute for an additional 30-45 Seconds
- Add in Broth of your choice & Water
- Add Diced Tomatoes
- Bring to a simmer
- Add in Meatballs
- Simmer for 30 to 45 Minutes
- Skim fat from the meat off top of pot throughout making the soup
- Add Potatoes
- Simmer 30 Minutes
- Add in soft veggies (ex. zucchini & Squash)
- Simmer 10 Minutes
- Add 1 cup of noodles
- Simmer additional 15 minutes or until noodles are soft
- Remove from heat so it doesn't continue cooking
- Enjoy!!!
Notes
This beauty of Albondigas is it's adaptability. Use whatever veggies or choice of meat that you like. We also like to add cabage on occasions. This recipe is not only great for making on the stove, but can also be made in a slow cooker crock pot. Make adjustments to recipe to meet your Family's needs, and what they enjoy!
